Description
Domaine Cauhapé L'Eclipse is a dry white from the Pyrenean foothills of Jurançon, built on Gros Manseng with a share of the near-forgotten local Lauzet.
Jurançon lies in the foothills of the Pyrenees south west of Pau, where vines are trained high on wires to escape spring frost and the autumn is long enough to leave fruit hanging into winter. Domaine Cauhapé sits above Monein, where Henri Ramonteu built the estate up to some forty hectares of Gros Manseng and Petit Manseng on clay and silex. The dry foehn wind off Spain shrivels the berries on the vine rather than encouraging botrytis, so the sweet wines are made by passerillage, picked in successive passes from October through to January. L'Eclipse is one of the estate's dry wines, harvested early to hold acidity, fermented cool in stainless steel and bottled under screwcap to keep it fresh and unoxidised.
Brisk and citrus-driven with the firm acidity typical of Gros Manseng, it works with oysters, goat's cheese and grilled white fish; serve well chilled at 8 to 10 degrees.
