Domaine Collotte Gevrey-Chambertin Évocelles comes from a cool, high lieu-dit at the northern edge of the commune.

Les Évocelles is a village level lieu-dit at the northern end of Gevrey-Chambertin, high on the slope above the hamlet of Brochon. Altitude and thin, stony soil make it a cool site that ripens late, and the wines it gives are taut and more mineral in cast than the broader, fleshier style of the vineyards on the lower ground east of the main road. Gevrey-Chambertin is the largest commune of the Côte de Nuits and home to nine grand crus, Chambertin and Clos de Bèze among them, but sites like this one show what the appellation can do outside the classified slope. Domaine Collotte is a family estate at Marsannay, a few kilometres north, farming parcels here as well as in Fixin and its home village.

Taut and structured with dark fruit, it repays cellaring and suits game, beef and mushroom dishes; serve at around 17 degrees.
