Domaine Collotte Marsannay Blanc Champsalomon 2022

Domaine Collotte Marsannay Blanc Champsalomon is a single lieu-dit white from the top of the Côte de Nuits.

Champsalomon is a named lieu-dit within Marsannay, and this bottling isolates it from the domaine's other white parcels. Marsannay is the only commune on the Côte d'Or entitled to make red, white and rosé under its village name, and its whites come principally from higher, stonier ground where limestone scree lies close to the surface, giving Chardonnay a chalky frame and firm acidity. Domaine Collotte is a family estate in the village farming a spread of lieux-dits across the appellation. The wine is fermented and matured in barrel, with new oak used sparingly, and left on fine lees to build a little texture without blurring the site.

More concentrated than the village white and worth a couple of years in bottle, it suits veal, poultry in cream and comté; serve at around 12 degrees.
