Daube de Boeuf Provençale (Beef Stew Provençal Style)
Ingredients:
- 1kg beef chuck, cut into large cubes
- 2 carrots, sliced
- 1 onion, chopped
- 2 garlic cloves, minced
- 250mL red wine (preferably Rhône)
- 2 tbsp tomato paste
- 1 bay leaf
- 1 sprig thyme
- Olive oil
- Salt and pepper, to taste
Instructions:
- Marinate beef in wine, garlic, and herbs overnight if possible.
- Heat olive oil in a heavy pot, brown the beef in batches, then remove.
- Sauté onion and carrot until soft, stir in tomato paste and cook briefly.
- Return beef to pot, pour in marinade, cover and simmer gently for 2.5–3 hours.
- Season to taste and serve with crusty bread or mashed potatoes.
