Domaine de Chevalier Rouge Grand Cru Classé de Graves 2016

Domaine de Chevalier Rouge Grand Cru Classé de Graves is the red wine of one of Pessac-Léognan's most respected estates, and 2016 is a large-scale, fresh and beautifully balanced vintage.

The estate lies in a clearing in the pine forest at Léognan, south of the city of Bordeaux, where cool nights and gravel soils over clay give wines of freshness and finesse. It is one of the classified growths of Graves, and the Bernard family has owned it since 1983, with Olivier Bernard extending and replanting the vineyard and refining every step in the cellar. Cabernet Sauvignon leads the red, supported by Merlot, Cabernet Franc and Petit Verdot. 2016 was a long, classic season with a dry summer, and the wine is deep ruby-purple, with red and black fruits, a balsamic hint of pine, pepper and mineral complexity over dense, refined tannins.

Despite its approachable fruit, this deserves time. Serve at 16 to 18 degrees after a two-hour decant, with roast pigeon, lamb with rosemary or venison, or cellar it for a decade and more.
