Domaine de Courbissac Minervois Les Traverses Rouge 2021

Domaine de Courbissac Minervois Les Traverses Rouge is a biodynamic blend of Grenache, Syrah and Mourvèdre from 11 parcels surrounding the cellar at Cesseras.

Minervois occupies the limestone hills between Carcassonne and Narbonne, and La Livinière, at its heart, is the cru that first won separate recognition there. Courbissac is based at Cesseras, within La Livinière, and Les Traverses is drawn from the estate’s younger vines across 11 hand-harvested parcels around the cellar. The blend is roughly equal parts Grenache, Syrah and Mourvèdre. Farming is biodynamic and the winemaking correspondingly plain: natural whole-bunch fermentation in concrete vat with minimal sulphur, the grapes gently foot-trodden, followed by six months in concrete. No oak is involved. The wine is bottled at 13 per cent alcohol, modest for the region, which is part of why it drinks the way it does.

Drink over the next three or four years. Serve at 16-18°C with grilled lamb, a sausage and lentil braise or a hard sheep’s cheese.
