Domaine de Courbissac Minervois Roc du Suzadou is an organically farmed red from a single old-vine parcel its grower treats as her grand cru.
Minervois climbs the southern slopes of the Montagne Noire above the Aude, and the higher, cooler ground gives reds with more freshness than the Languedoc plain. Domaine de Courbissac is farmed organically by Brunnhilde Claux, who has been working through the estate's parcels one at a time as she comes to know them. Roc du Suzadou, named after one of the highest peaks in Minervois, lies close to the cellar on clay and limestone and holds Carignan of around seventy years and Grenache of around ninety. An old wine-growing family in the district told Claux that the vines here are grafted to a phylloxera-resistant rootstock derived from French vine species, a rootstock few in France know exists. Most top Minervois cuvées today are based at least partly on Syrah; this one contains none.
It is open now and will keep for several years yet. Serve at 16-18°C with slow-cooked lamb shoulder, cassoulet or grilled eggplant.
