Domaine de Marzilly Champagne Ullens Lot 7 2007 is an ultra-limited extra brut Champagne crafted by rising-star winemaker and architect Etienne Calsac, whose meticulous, terroir-driven approach has made him one of the most exciting young voices in Champagne. Nestled in the Massif de Saint-Thierry near Hermonville - a cool, forest-fringed corner of the region known for expressive Meunier—the domaine draws its character from clay-sand-limestone soils and a uniquely vibrant microclimate. This cuvée blends 56% Meunier, 37% Chardonnay, and 7% Pinot Noir with 42% reserve wine, vinified entirely in oak for 11 months before resting 36 months on lees. The result is luminous and refined, with silvery reflections, a complex nose of florals, toast, and yellow stone fruit, and a dynamic, saline finish. Unfined, unfiltered, and limited to just 4,700 bottles (fewer than 200 in Australia), it captures the precision and purity that define Calsac’s philosophy.
