Domaine Denis Mortet Bourgogne Rouge Cuvée de Noble Souche comes from the plateau at Daix near Marsannay, where the vines sit at 400 metres.
Bourgogne Rouge is the region's broadest appellation, and the difference between a workmanlike example and a serious one usually comes down to the site and the attention it receives. Mortet's fruit is grown at Daix, on the high plateau behind the Côte, where the altitude brings freshness and purity to the fruit and slows ripening compared with the slope below. Yields are kept very low, which gives the wine depth and the capacity to age well beyond what the label suggests. The winemaking follows the same pattern as the estate's more prestigious cuvées: over 50% whole bunches went into the vat and only 10% new oak was used, so the wood plays no obvious part. The name refers to the quality of the plant material, the noble stock the domaine has selected over years.
Drinking from two years and good for eight or so. Serve at 16-18°C with charcuterie, roast chicken or a beef and mushroom pie.
