Domaine Denis Mortet Grand Cru Chambertin 2019

Mortet's Chambertin comes from a 0.15-hectare parcel of sixty-year-old vines at the southern end of the grand cru, close to the Combe Grisard.

Chambertin is the senior grand cru of Gevrey-Chambertin, a long east-facing slope on limestone and marl whose reputation rests on the combination of power and precision it can hold at once. The southern end of the vineyard sits near the Combe Grisard, a small side valley that funnels cooler air across the vines and helps preserve acidity in warm years. The domaine's holding here is tiny, a sixth of a hectare of old vines, so production is measured in a handful of barrels. Arnaud Mortet farms it with the same low yields and careful, unforced extraction he applies across the estate, and the wine sees a restrained proportion of new oak by the standards of a grand cru of this rank. Bibendum normally tastes it from barrel and only rarely from bottle.

This asks for ten years and will run far longer. Serve at 16-18°C with roast beef, hare or a mature hard cheese.
