Description
Domaine des Baumard Carte Corail is a rosé Crémant de Loire made from ninety per cent Cabernet Franc with ten per cent Grolleau.
Rochefort-sur-Loire, where the Baumard family have worked since the eighteenth century, sits in the Anjou on schist soils at the heart of the Layon valley. Crémant de Loire is made by the traditional method, with whole-bunch pressing, a second fermentation in bottle and a minimum of twelve months on lees before disgorging. Carte Corail is built on Cabernet Franc, the Loire's principal red grape, which gives raspberry and redcurrant fruit and a firm structure, with Grolleau, an old Anjou variety of light colour and bright acidity, filling out the blend. Skin contact is brief, giving a pale coral colour, and the wine is finished brut.
Dry rather than fruity-sweet: serve it chilled as an aperitif, or with charcuterie, salmon, and red-berry desserts.
