Description
Domaine des Baumard Coteaux du Layon Clos St Catherine is a single-parcel sweet Chenin Blanc from a south-facing terrace of schist above the Layon river.
The Clos St Catherine sits at Rochefort-sur-Loire on a south-facing shoulder of schist, and Domaine des Baumard has long treated it as the best of its Coteaux du Layon holdings. The Baumards have farmed in Anjou since the seventeenth century, and Florent Baumard now directs the estate, which also owns vines in Savennieres and Quarts de Chaume. Chenin Blanc from the clos is harvested in repeated passes so only berries with sufficient concentration are taken, then pressed gently and fermented cool in tank, without oak, to keep the wine's line clean. Fermentation was arrested with 136 grams per litre of residual sugar remaining, and the bottle is closed with a stelvin-luxe screwcap.
Rich but driven by acidity rather than sugar, it suits foie gras, Roquefort and baked stone-fruit desserts, and it will age at length; serve at around 8 to 10 degrees.
