Domaine des Baumard Coteaux du Layon Clos St Catherine 2018

Domaine des Baumard Coteaux du Layon Clos St Catherine is a sweet Chenin Blanc from a single schist terrace that the estate has bottled separately for decades.

Anjou's schist warms quickly and drains hard, which pushes Chenin Blanc towards full ripeness, while the mists rising off the Layon in autumn encourage noble rot. The Clos St Catherine occupies a south-facing shoulder of that schist at Rochefort-sur-Loire, above the river. Fruit is picked over several tries, pressed slowly and fermented in stainless steel at low temperature, with no wood at any point, an approach Florent Baumard follows across the range and which keeps these wines unusually precise for their sweetness. Residual sugar here settled at 138 grams per litre. The wine is sealed under stelvin-luxe, a closure the estate adopted early and unusually for sweet wines built to age.

Sweet, dense and firmly acidic, it will reward keeping and goes with foie gras, blue cheese or a simple fruit tart; serve at around 8 to 10 degrees.
