Domaine des Baumard Savennières Clos du Papillon is the estate's flagship dry Chenin Blanc, from the butterfly-shaped site regarded as the finest in the appellation.
The Clos du Papillon takes its name from the shape of the vineyard, a broad butterfly of land on the slope above the Loire in the commune of Savennières. Its schist and sandstone soils are thin and free-draining, the exposure is southerly and the river moderates the nights, a combination that ripens Chenin Blanc fully while keeping its acidity intact. Baumard, based at Rochefort-sur-Loire, have farmed here for generations and treat the wine with characteristic restraint: whole-bunch pressing, slow cool fermentation, ageing without new oak and careful protection from oxygen. The stelvin-luxe closure is a deliberate choice by the domaine, taken to hold these wines steady over long ageing.
A benchmark dry Savennières that rewards years in the cellar; decant and serve with lobster, roast veal or aged Comté at around 12 degrees.
