Domaine des Carlines En Beaumont Savagnin 2022

Domaine des Carlines En Beaumont Savagnin is made from the Jura's own white grape, grown in the hills between Burgundy and Switzerland.

Savagnin is a relative of the Traminer family and ripens late, which suits it to the marl slopes of the Revermont, where it has been planted for centuries. It is the grape of vin jaune, aged for more than six years in barrels left deliberately unfilled beneath a veil of yeast, but it is also made in a topped-up style that shows the variety more directly. The Côtes du Jura appellation, which stretches from Salins-les-Bains down to Saint-Amour, allows both. Savagnin is planted in small quantity, and the entire Jura vineyard amounts to only around two thousand hectares, a remnant of the twenty thousand or so that stood here before phylloxera and the First World War. Nowhere else in France treats a white grape quite this way.

Serve at about 12 degrees with Comté, chicken in a cream and morel sauce, or smoked fish.
