Domaine des Carlines Savagnin Ouillé En Charnay Côtes du Jura is a single-site Savagnin made in the fresh, topped-up ouillé style.

In the Jura, Savagnin is often aged under a veil of yeast to make oxidative wines such as vin jaune. Ouillé means the barrels are kept topped up, so the wine avoids that oxidative character and shows the grape's fruit, acidity and mineral side. En Charnay is one of the single-vineyard Savagnins from Patrick and Sophie Ligeron, who established their domaine at Menétru-le-Vignoble in 2015. Their vines grow on the grey marl of the Château-Chalon area, soils prized for salinity and ageing potential.

Serve cool with poached chicken, trout, Comté or a creamy mushroom dish. It will reward some cellaring.
