Domaine des Croix Beaune 1er Cru Les Bressandes comes from organically farmed old vines high on the slope above Beaune, part of it steep enough to be worked by horse.
Beaune has no grand cru of its own, but a handful of premier crus consistently produce the town’s best reds, and Bressandes is one of them. It shares its name with a grand cru climat on the hill of Corton nearby, which is no coincidence: both sit on the kind of ground that gives Pinot Noir structure without heaviness. David Croix farms 0.88 hectares here at around 300 metres on a 25-degree incline, spread across three parcels planted in 1983, 1987 and 1991. All face east on thin, gravelly soils and have been farmed organically for more than a decade. The fruit was half destemmed and extracted carefully before ageing in used casks alone, so the wine keeps its mineral, rocky, earthy cast rather than taking on oak.
Give young bottles air, or cellar them for five to ten years. Serve at 16-18°C with roast pork, coq au vin or a mushroom and thyme tart.
