Domaine des Lises Crozes-Hermitage Rouge is Maxime Graillot's estate wine, grown on the alluvial gravels near Beaumont-Monteux.
Crozes-Hermitage is the largest of the northern Rhône appellations, and its southern plain around Beaumont-Monteux is quite different from the granite slopes further north. The lieux-dits here, Les Bosquets and Les Pichères, sit on fast-draining alluvial stones and gravel with very little clay, soils close to those of Les Chênes Verts a short distance away. The vines were planted through the 1980s and are managed organically. Fermentations are entirely natural, and Graillot uses only a small whole-bunch component, usually 20 to 30 per cent, which is why the wine tends to come around earlier than the fully whole-bunch wines bottled under the Alain Graillot name. The 2022 was fermented in concrete, then racked into one-, two- and three-year-old Burgundy barrels, a 12-hectolitre Stockinger cask and a small amount of Slavonian oak.
Ready on release and drinking well for five to eight years. Serve at 16-18°C with braised beef cheek, merguez sausages or a tapenade-dressed lamb rump.
