Domaine des Perdrix Nuits-Saint-Georges is a village red from the Côte de Nuits, made by a domaine whose home is the hamlet of Prémeaux-Prissey.
Nuits-Saint-Georges is the commercial heart of the Côte de Nuits and gave the sub-region half its name. It has no grand cru, an omission that has never made much sense to anyone who knows its best premier crus, and its wines are known for structure and staying power rather than early perfume. The appellation covers vineyards in Nuits itself and in Prémeaux-Prissey to the south, where this domaine is based and from which it takes its name, after the climat Aux Perdrix. The estate belongs to the Devillard family, who also own Château de Chamirey in Mercurey. Fruit is hand harvested, fermented in small lots and raised in oak barrels.
Decant and serve at about 16 degrees with beef, duck or a firm washed-rind cheese; it will keep for several years.
