Description
Domaine Desvignes Givry Blanc is a white from a Côte Chalonnaise village far better known for its reds.
Givry is one of the five village appellations of the Côte Chalonnaise, the strip of broken limestone hills that continues south from the Côte de Beaune. It is principally red wine country, and white Givry accounts for only a small share of plantings, grown on the higher, stonier parcels where limestone comes close to the surface. Chardonnay is the only white grape permitted. In style the wines sit between the leanness of Chablis and the weight of the Côte de Beaune: dry, firm and citrus toned, with a chalky edge and enough substance to carry a little oak. Ageing is typically in a mix of tank and used barrel, with new wood kept to a minimum.
A dry, food friendly white that suits roast chicken, river fish and comté; serve at around 12 degrees.
