Domaine Didier Dagueneau Vin de France Silex 2023

Silex is the flint-grown cuvée at the top of the Dagueneau range, a Sauvignon Blanc of famous longevity bottled as Vin de France.

Domaine Didier Dagueneau sits at Saint-Andelain in Pouilly-Fumé, where the founder rewrote the local rulebook in the 1980s and 1990s and where his son Louis-Benjamin has run the estate since 2008. Silex takes its name from the French for flint, and comes only from the flint-rich soils on the north-facing slopes of the Saint-Andelain hill. The vines mostly range between 35 and 65 years old and yields are held lower than elsewhere on the property. Fermentation and ageing take place in the domaine's cigar-shaped barrels and other casks, with a portion now maturing in 220-litre Wineglobes, neutral glass vessels that avoid reduction and allow lower sulphur levels. Because of the soil and the concentration of mature vines, the wine is always intense and often austere in youth, typically needing five to ten years to open out. Only 150 bottles were shipped to Australia.

Built for the cellar but rewarding now with a good decant. Serve at 10 to 12°C with turbot, roast chicken or a plate of Loire goat's cheeses.
