Domaine du Pélican Brut S° 2020

Domaine du Pélican Brut S° is a traditional method sparkling wine from the Jura, built on Savagnin.

Sparkling wine is no sideline in the Jura; a substantial share of the region's production is fermented a second time in bottle and aged on lees, a practice that goes back well over a century. What sets this bottling apart is the grape. Rather than the Chardonnay that dominates most Jura sparkling, it draws on Savagnin, the late-ripening white variety that is the region's own and is more often associated with the wines of Château-Chalon and Arbois. Savagnin ripens late and holds its acidity well, which suits a base wine destined for a second fermentation. Domaine du Pélican was founded in 2012 by Guillaume d'Angerville of Volnay, and works its Arbois vineyards organically and biodynamically, with hand harvesting throughout.

Serve well chilled, at about 8 degrees, as an aperitif, or with oysters and other shellfish.
