Description
Domaine du Pré Semelé Sancerre Blanc is a dry Sauvignon Blanc from the upper Loire.
Sancerre sits on the left bank of the Loire where the river turns north, on the same band of Kimmeridgian limestone and flint that runs up to Chablis, and it is the reference point for restrained, mineral Sauvignon Blanc as against the tropical style of the New World. The domaine farms parcels around the village of Bué, south-west of the town, on the caillottes and terres blanches soils that give the appellation its two faces. The wine is pressed whole-bunch, fermented cool in stainless steel and left on lees before bottling, with no oak.
Serve at 8 to 10 degrees with oysters, goat's cheese from Chavignol, or asparagus. Drink within three years.
