Domaine du Salvard's L'Héritière is an old-vine Cheverny blanc, an appellation that requires Sauvignon Blanc to be blended with Chardonnay.
Cheverny lies in north-eastern Touraine, on the plains of sand, clay and limestone between Blois and the Sologne forest. The Delaille family have farmed here for generations, and Gilbert and his sons have introduced sustainable practices in the vineyard along with temperature-controlled vinification in the cellar. L'Héritière is the estate's old-vine, low-yield bottling, drawn from the oldest limestone-rooted parcels and made to roughly the same recipe as the standard Cheverny: about 85% Sauvignon Blanc with 15% Chardonnay. The fruit is hand harvested, the two varieties are fermented separately in barrel and blended afterwards, and the wine is bottled unfiltered. The result is a fuller, more textural take on Cheverny than the tank-raised norm, while keeping the lively, faintly herbal cut the appellation is known for.
Drink over the next three to five years with goat's cheese, grilled white fish or asparagus; serve at 10–12°C.
