Domaine Faiveley Gevrey-Chambertin Premier Cru 'Lavaux Saint-Jacques' is a Premier Cru set in the mouth of the Combe de Lavaux, the ravine that cuts into the hillside above Gevrey.
The combe draws cool air down onto the vineyard and exposes a band of stony limestone soil, and the wines from it are commonly ranked just behind those of the neighbouring Clos Saint-Jacques. Lavaux Saint-Jacques lies on the slope north-west of the village, a little higher than the Grands Crus that run south along the road towards Morey-Saint-Denis. Gevrey-Chambertin is the largest commune of the Côte de Nuits and counts nine Grands Crus. Faiveley has been established at Nuits-Saint-Georges since 1825 and is now in its seventh generation, working its parcels individually and ageing them in French oak with a restrained proportion of new wood.
Serve at about 16 degrees with roast game, beef or a mature cheese. It will reward ten years or so in the cellar.
