Roast Chicken with Citrus-Herb Glaze

Ingredients:

  • 4 chicken thighs (skin-on, bone-in)
  • Salt and pepper, to taste
  • 2 tbsp olive oil
  • 2 garlic cloves, minced
  • Juice of 1 orange
  • Juice of 1 lemon
  • 1 tsp honey (optional)
  • 1 tsp fresh thyme leaves
  • 1 tsp fresh rosemary, chopped
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Preheat your oven to 200°C. Season the chicken thighs generously with salt and pepper.
  2. Heat olive oil in an ovenproof skillet over medium-high heat. Sear the chicken thighs, skin-side down, for about 5–6 minutes until the skin is crisp and golden. Flip and sear for an additional 3 minutes. Remove the chicken and set aside.
  3. In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant.
  4. Stir in the orange juice, lemon juice, honey, thyme, and rosemary. Allow the mixture to simmer for 3–4 minutes until slightly reduced into a glaze.
  5. Return the chicken to the skillet, spooning the citrus-herb glaze over each piece, and transfer the skillet to the preheated oven. Roast for an additional 10–12 minutes until the chicken is fully cooked and infused with the glaze.
  6. Remove from the oven, garnish with fresh parsley, and serve immediately.
