Roast Chicken with Citrus-Herb Glaze
Ingredients:
- 4 chicken thighs (skin-on, bone-in)
- Salt and pepper, to taste
- 2 tbsp olive oil
- 2 garlic cloves, minced
- Juice of 1 orange
- Juice of 1 lemon
- 1 tsp honey (optional)
- 1 tsp fresh thyme leaves
- 1 tsp fresh rosemary, chopped
- Fresh parsley, chopped (for garnish)
Instructions:
- Preheat your oven to 200°C. Season the chicken thighs generously with salt and pepper.
- Heat olive oil in an ovenproof skillet over medium-high heat. Sear the chicken thighs, skin-side down, for about 5–6 minutes until the skin is crisp and golden. Flip and sear for an additional 3 minutes. Remove the chicken and set aside.
- In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant.
- Stir in the orange juice, lemon juice, honey, thyme, and rosemary. Allow the mixture to simmer for 3–4 minutes until slightly reduced into a glaze.
- Return the chicken to the skillet, spooning the citrus-herb glaze over each piece, and transfer the skillet to the preheated oven. Roast for an additional 10–12 minutes until the chicken is fully cooked and infused with the glaze.
- Remove from the oven, garnish with fresh parsley, and serve immediately.
