Domaine François Chidaine Montlouis Brut Tradition is a traditional-method Chenin sparkling made under Chidaine's négociant label rather than by the estate.
Montlouis-sur-Loire sits across the river from Vouvray and has long made a serious sparkling wine from Chenin Blanc. This cuvée came about because of low estate yields, and the fruit was bought from a young grower in Montlouis working parcels in organic conversion, on sandy clay topsoil over the tuffeau limestone bedrock that defines the appellation. It should not be confused with the estate's own Brut Nature. After a gentle pneumatic pressing, the juice was fermented with indigenous yeasts in large-format barrels for up to six months, then aged a further six months on fine lees in tank before being bottled to rest on lattes for at least twelve months. There was no malolactic fermentation, no chaptalisation and no dosage, so the wine finishes bone dry.
Drink now or over the next three years. Serve at 8°C as an aperitif, or with oysters, fried chicken or a soft washed-rind cheese.
