Domaine François Chidaine Touraine Rosé 2020

Domaine François Chidaine Touraine Rosé is built on Grolleau, the old Loire variety that gives fragrance and texture rather than power.

Touraine covers a broad stretch of the middle Loire, and its rosés have long been built on Grolleau, a regional variety now much less planted than it once was. Chidaine's version is seventy per cent Grolleau, with the remainder split between Pinot Noir and Gamay. The vines are rooted in the flint, clay and limestone of the Cher Valley, the tributary that joins the Loire near Tours, and the farming is certified organic. Winemaking is deliberately plain: the fruit is fermented with wild yeasts and the wine is raised in steel tank, with no oak at any point and nothing done to strip out colour or texture. The result is a dry rosé that is fragrant and full-flavoured, with more grip and substance than the very pale, neutral style that dominates the category, which is much the point of using Grolleau at all.

Best drunk young, within a year or two. Serve at 10-12°C with charcuterie, grilled prawns or a summer vegetable tart.
