Domaine François Chidaine Touraine Sauvignon Blanc 2022

Domaine François Chidaine Touraine Sauvignon Blanc now draws on fruit from the domaine's own organic vines and from his son-in-law's holdings at Limeray.

The Touraine appellation follows the middle Loire around Tours, and this Sauvignon comes from vineyards at Chissay-en-Touraine and Saint-Julien-de-Chédon, less than ten kilometres upstream from Chidaine's Montlouis base. Viticulture across these sites is strictly organic and biodynamic. Alongside his own vines, Chidaine now also sources fruit from his grower son-in-law, Jean-Baptiste Bonnigal, at Limeray. The juice was fermented with a high proportion of solids, which builds texture in the wine, then matured on lees, with a small barrel-aged portion added for complexity. The house priority applies here as it does to the Chenins: terroir first, variety second. What results is a ripe, fleshy Sauvignon of stone fruit, white flower and chalky drive rather than the pungent herbaceous style the grape is so often reduced to, closing with a long, salty, citrus-edged finish.

Best over the next two or three years. Serve at 10-12°C with grilled asparagus, fresh goat's cheese or pan-fried flathead.
