Domaine François Chidaine Touraine Sauvignon Blanc is a Sauvignon from a grower far better known for Chenin Blanc, farmed organically and biodynamically.
Touraine is the broad central Loire appellation around Tours and Amboise, where Sauvignon Blanc is the workhorse white on soils of clay, flint and limestone. François Chidaine built his reputation on Montlouis-sur-Loire and Vouvray, and this wine comes from vines at Chissay-en-Touraine and Saint-Julien-de-Chédon, less than 10 kilometres upstream from Montlouis. The viticulture is strictly organic and biodynamic. Alongside his own vineyards, Chidaine now also draws fruit from his son-in-law, the grower Jean-Baptiste Bonnigal, at Limeray. The juice ferments with a high proportion of solids and is then matured on lees, with a small barrel-aged portion added for complexity. The result puts site ahead of variety, which has always been the Chidaine signature.
Best drunk within two or three years of release. Serve at 10-12°C with goat’s cheese, asparagus or pan-fried whiting.
