Description
Baudoin is François Chidaine's dry Chenin Blanc from the Clos Baudoin, one of the great Vouvray vineyards, bottled as Vin de France.
Chidaine is based at Montlouis-sur-Loire, across the river from Vouvray, and took on the Clos Baudoin in 2002, restoring the soils and converting the site to biodynamics. Because he vinifies Vouvray fruit in his Montlouis cellar, the wine cannot carry the Vouvray appellation and is labelled Vin de France instead. The clos covers 2.7 hectares on the crest of a hill above the surrounding countryside, with an average vine age of more than 70 years, on clay and chalk over a deep tuffeau subsoil. Compared with the more approachable Les Argiles cuvée, this is a deep, tightly coiled and compact Vouvray. It is raised in demi-muids more than ten years old, so the oak leaves no flavour, only texture.
Give it several years and drink over the next fifteen. Serve at 10 to 12°C with roast pork, pike-perch in butter or a mature goat's cheese.
