Description

Sibylle is Gérard Boulay's Sancerre rosé, made from Pinot Noir grown expressly for the purpose on the steep hillside of Chavignol.

Sancerre is known abroad for Sauvignon Blanc, but Pinot Noir has long been planted there, and the appellation produces a disproportionate share of France's serious rosés. Boulay is one of the reference growers of Chavignol, the hamlet whose steep Kimmeridgian slopes give Sancerre its most structured wines. This cuvée comes from roughly 0.8 hectares of vines between 35 and 50 years old, hand-harvested and macerated on skins for 24 hours to draw colour. Press wine and free-run juice are fermented separately with wild yeasts, malolactic conversion is blocked to keep tension, and no oak is used. The result is a rosé built on clarity and grip rather than sweetness, with red fruit, watermelon and citrus peel over a silken palate.

Drink young, within two or three years, with grilled prawns, charcuterie or a summer salad, served at 8 to 10°C.
