Grilled Portobello Mushrooms with Herbed Quinoa

Ingredients:

  • 4 large Portobello mushrooms, stems removed
  • 2 tbsp olive oil
  • Salt and pepper, to taste
  • 1 cup quinoa, rinsed
  • 2 cups vegetable broth
  • 1 small red bell pepper, diced
  • 1 small zucchini, diced
  • 1 garlic clove, minced
  • 1 tbsp chopped fresh basil
  • 1 tbsp chopped fresh parsley
  • Juice of 1 lemon

Instructions:

  1. Preheat your grill or grill pan over medium-high heat. Brush the Portobello mushrooms with olive oil and season with salt and pepper. Grill for about 4–5 minutes per side until tender and lightly charred. Set aside.
  2. In a saucepan, combine the rinsed quinoa and vegetable broth. Bring to a simmer, cover, and cook for 15 minutes or until the quinoa is fluffy and the liquid is absorbed.
  3. Meanwhile, in a skillet, heat a drizzle of olive oil over medium heat. Sauté the minced garlic, red bell pepper, and zucchini until just softened, about 3–4 minutes.
  4. Fluff the cooked quinoa and stir in the sautéed vegetables, fresh basil, parsley, and lemon juice. Season with salt and pepper to taste.
  5. Slice the grilled Portobello mushrooms and serve them atop a generous portion of herbed quinoa.
