Domaine Goisot Bourgogne Aligoté is drawn from biodynamically farmed old vines on the high, cool slopes above Saint-Bris.
Aligoté is Burgundy's second white variety and needs old vines and the right soils to give anything beyond simple refreshment. Goisot's holdings meet the brief. The core of the wine is a parcel of 90-year-old Aligoté Doré planted on high ground north-west of Saint-Bris, on a soil known locally as barrémien: ancient, dense clay littered with blue-grey fossilised oyster shells several inches long. To that is added a group of 45-year-old vines in the lieux-dits of Croix Rougeot, Côte de Coutance and Côte de la Canne, near the Exogyra Virgula vineyard. The estate is farmed biodynamically and the family picks for properly ripe, yellow fruit, which gives a more textured and pulpy wine than the variety usually manages. Fermentation is with native yeasts and the wine is raised entirely in tank, with no oak.
Drink over the next three to four years. Serve at 10-12°C with oysters, salt-and-pepper squid or gougères.
