Domaine Goisot Bourgogne Côtes d'Auxerre Biaumont Blanc 2019

Domaine Goisot Bourgogne Côtes d'Auxerre Biaumont Blanc is a single-vineyard Chardonnay from old vines on Kimmeridgian soils near Saint-Bris.

The Côtes d'Auxerre lies in the Yonne, in the same broad orbit as Chablis, and shares its Kimmeridgian limestone and marl, though the wines are bottled under the regional Bourgogne appellation. Like any part of Burgundy it is a mosaic of small climats, and Domaine Goisot, which farms biodynamically, works more than 40 individual parcels, bottling only the finest Chardonnay sites separately. This cuvée comes from a single hectare of old vines in Les Biaumonts at 250 metres, where the vines are 40 to 50 years old. Biaumont has a sunnier south to south-west aspect than the domaine's other sites and its very rocky soil carries more brown clay, along with a striking quantity of ammonite fossils, which Goisot notes is unusual at this altitude.

Drink over the next five to eight years, with oysters, roast chicken or a soft goat's cheese. Serve at 10 to 12 degrees.
