Domaine Goisot Bourgogne Côtes d'Auxerre Biaumont Blanc 2020

Domaine Goisot Biaumont is a single-vineyard Côtes d'Auxerre Chardonnay from a hectare of old vines on a sunny, fossil-strewn slope.

Like the rest of Burgundy, the Côtes d'Auxerre is a mosaic of small climats, and Goisot farms more than 40 individual parcels, bottling only the finest Chardonnay sites on their own. This cuvée comes from a single hectare in Les Biaumonts, at 250 metres above sea level, where the vines are between 40 and 50 years old. The soils share the Kimmeridgian profile of Gueules de Loup, but Biaumont faces south to southwest, so it is a sunnier site, and there is more brown clay in a very rocky soil scattered with large ammonite fossils, something Goisot notes is unusual at this altitude. The farming is biodynamic and the winemaking non-interventionist, with wild-yeast fermentation and restrained élevage.

Drink from one to two years and hold up to eight. Serve at 10-12°C with roast chicken, grilled fish or a cheese soufflé.
