Domaine Goisot Bourgogne Cotes d'Auxerre Corps de Garde Rouge 2018

Corps de Garde is Domaine Goisot's Pinot Noir from three mature plots in the Bourgogne Côtes d'Auxerre, farmed biodynamically.

The Côtes d'Auxerre sits in the far north of Burgundy, near Chablis rather than the Côte d'Or, and shares the Kimmeridgian limestone that defines that part of the region. Goisot, based at Saint-Bris-le-Vineux, is the reference producer of the area. The fruit for this cuvée comes from vines of 40 to 70 years in Côte de la Ronce, Côte de Tue Chien and Gueules de Loup, on slopes of Kimmeridgian limestone mixed with red-brown and white clays. All the grapes are destemmed and there is no pigeage, since Goisot prefers to extract gently from the skins alone rather than the pips. The wine is macerated and fermented in open wood, then transferred to 300-litre Burgundian barriques, a fifth of them new and the rest one to five years old, for 12 months.

Approachable now and good for five to eight years; serve at 16-18°C with roast chicken, coq au vin or a soft cheese.
