Domaine Goisot Bourgogne Côtes d'Auxerre Corps de Garde Rouge 2019

Domaine Goisot Bourgogne Côtes d'Auxerre Corps de Garde Rouge is a Pinot Noir from three mature plots of Kimmeridgian limestone north of the Côte d'Or.

The Côtes d'Auxerre lies in the Yonne, closer to Chablis than to Beaune, and it works the same Kimmeridgian limestone that runs beneath the Chablis slope. Domaine Goisot, based at Saint-Bris-le-Vineux, is the reference point for the district. This red is drawn from vines of forty to seventy years in Côte de la Ronce and Haut de la Ronce, Côte de Tue Chien and Gueules de Loup, on slopes where the limestone is mixed with both red-brown and white clay. The fruit is entirely destemmed and there is no pigeage, since Goisot prefers to draw tannin gently from the skins rather than the pips. Maceration and fermentation take place in open wooden vats, after which the wine spends twelve months in 300-litre Burgundian barriques, a quarter of them new and the rest between one and five years old.

Approachable now and worth keeping for up to eight years. Serve at 16-18°C with roast chicken, coq au vin or a plate of Comté.
