Domaine Goisot Bourgogne Côtes d'Auxerre Corps de Garde Rouge is a Pinot Noir drawn from three mature plots on Kimmeridgian limestone slopes.
The Côtes d'Auxerre is a regional appellation in the Yonne, north of the Côte d'Or and west of Chablis, where Pinot Noir ripens slowly and keeps its acidity. This cuvée comes from vines between 40 and 70 years old in Côte de la Ronce and Haut de la Ronce, Côte de Tue Chien and Gueules de Loup, all on Kimmeridgian limestone mixed with red-brown and white clays. The fruit is entirely destemmed and there is no pigeage, because Goisot prefers to draw tannin gently from the skins rather than from the pips. The wine is macerated and fermented in open wooden vats, then moved to 300-litre Burgundian barriques, 20 per cent of them new and the rest between one and five years old, for 12 months. The name comes from the family's fourteenth-century guardhouse and cellar in the village.
Drinking well now and worth keeping for up to eight years. Serve at 16-18°C with roast pork, coq au vin or a plate of charcuterie.
