Domaine Goisot Bourgogne Cotes d'Auxerre Gueules de Loup Blanc 2019

Gueules de Loup is a one-hectare limestone site in the Côtes d'Auxerre, named for the snapdragons that grow wild in its soils.

The Côtes d'Auxerre runs along the limestone slopes around Saint-Bris-le-Vineux in the northern Yonne, and Goisot, which farms biodynamically, has long treated this parcel as one of its finest. The vineyard faces south to south-east and its soil is close to pure limestone, which gives the wine its mineral spine without stripping it of flesh; the vines are more than forty years old. The Goisots draw a comparison with the Chablis premier cru Vaillons, though this has more of a broad white Burgundy personality than that reference suggests. The whole cuvée is matured in barrel on its lees, which builds texture and carries the fruit rather than marking it with oak.

Approachable now but worth five or six years in the cellar; serve at 10-12°C with roast chicken, scallops or a soft washed-rind cheese.
