Domaine Goisot Bourgogne Côtes d'Auxerre Rouge is a biodynamic Pinot Noir grown on the same Kimmeridgian limestone that underlies Chablis.
The Côtes d'Auxerre lies in the Yonne, north of the Côte d’Or and close to Chablis, so its reds come from a cooler and more limestone-driven place than Burgundy’s better-known Pinot country. Goisot farms biodynamically and draws this wine from five lieux-dits on the clay and limestone hillsides above Auxerre, 80 per cent of them Kimmeridgian soils and the rest Portlandian, with vine age running from 10 to 30 years. Fermentation is by wild yeasts in large tronconique oak fermenters, and the wine is then aged on lees, again in large oak, before blending and bottling unfiltered. Extraction is deliberately light: a very gentle pumping over and no punch-downs, a change from the domaine’s former practice. What results is a distinctly northern style of Pinot Noir, medium-bodied and framed by fine, powdery tannin.
Drinking well now and over the next four to six years. Serve at 16-18°C with roast pork, mushroom dishes or a soft washed-rind cheese.
