Description
Domaine Goisot Saint-Bris Corps de Garde Blanc is made from Fié Gris, the old Auxerrois name for Sauvignon Gris, in the only Sauvignon appellation in Burgundy.
Saint-Bris sits west of Chablis near Auxerre and is the one Burgundian appellation given over to Sauvignon rather than Chardonnay or Aligoté. Fié Gris was once widely planted around the town, but it is fickle and low yielding, on average 35 to 40 per cent below Sauvignon Blanc, and that sealed its fate almost everywhere else. The Goisots, who farm biodynamically, persevered with it, and their old vines now grow in the rich red-brown clay and limestone of the Côte de la Canne, Cornevin and Moury vineyards. Unlike the domaine's Sauvignon Blanc bottlings, this wine was partly fermented and raised in old 500-litre barrels, which adds breadth and a little grip without leaving obvious oak character. It has long been a Bibendum favourite and remains one of Burgundy's genuine leftfield gems.
Drink now and over about five years, with asparagus, chèvre and grilled white fish. Serve at 10-12°C.
