Description
Domaine Goisot Saint-Bris Exogyra Virgula is Sauvignon Blanc from the only appellation in Burgundy that grows it.
Saint-Bris is a small enclave near Chablis and the one Burgundian appellation planted to Sauvignon Blanc rather than Chardonnay. Exogyra virgula is the name of the tiny fossil oyster found throughout the Kimmeridgian limestone here, and the cuvée is named for it. Jean-Hugues and Ghislaine Goisot farm the estate biodynamically.
Serve well chilled at 10 degrees with goat's cheese, oysters, asparagus or grilled white fish.
