Domaine Goisot La Ronce is a Saint-Bris field blend of the two Sauvignons, planted deliberately to revive an older way of working.
Saint-Bris, near Auxerre, is the one appellation in Burgundy given over to Sauvignon Blanc, and the Goisot family are its leading growers, farming biodynamically. This cuvée comes from the north-facing section of La Ronce, the part of the vineyard that qualifies for the Saint-Bris appellation. Guilhem Goisot planted it between 2012 and 2015 with both Sauvignon Blanc and Sauvignon Gris interplanted, in his words an old-style field blend of the kind his grandparents made, so the two varieties are picked and fermented together. The wine was fermented with wild yeasts and raised in tank for 19 months, with about 10 per cent of the juice in earthenware amphorae, which adds a savoury edge that he intends to build on in future vintages.
Drink now and over the next four to five years. Serve at 10-12°C with goat's cheese, grilled asparagus or a plate of fresh seafood.
