Description
Saint-Bris is the only appellation in Burgundy given over to Sauvignon Blanc, and Moury is Goisot's single-parcel expression of it.
The appellation sits in the Auxerrois, a short drive west of Chablis, and was promoted from VDQS to full AOC status in 2003. Goisot is its best-known name and farms biodynamically. Moury comes from one 1.3-hectare parcel on Barrois limestone, a Portlandian rock that breaks up into pebbles over a silty clay base, and the stones and shallow soil hold back vigour. Vinification is in tank only, with no wood at any stage, and the wine is then raised on its fine lees, which is where much of its weight comes from. This is the richer and more openly hedonistic of the two Sauvignons the estate makes, fleshier in texture than most drinkers expect from the variety, with a spicy mineral core and a saline finish that reflects the limestone underneath.
Ready now and holding for three to four years; serve at 10-12°C with asparagus, Chavignol-style goat's cheese or grilled prawns.
