Description
Domaine Goisot Saint-Bris Moury is a single-parcel Sauvignon Blanc on Barrois limestone, and the richer of the domaine’s two wines from the variety.
Saint-Bris, in the Auxerrois north of Chablis, is Burgundy’s lone Sauvignon Blanc appellation, and the Goisots, who farm biodynamically, make two wines from it. Where Exogyra Virgula comes from fossil-strewn Kimmeridgian slopes, Moury is drawn from a single 1.3-hectare parcel on Barrois limestone, a Portlandian-era rock with plenty of pebbles and silty clay. That gives the more hedonistic of the pair: a far fleshier texture than most drinkers expect from the variety, with a spicy mineral core and pronounced saline notes. The wine is vinified in tank only and raised on its fine lees. Goisot’s Saint-Bris shares something with good Sancerre, but tends to a more overtly citrussy, pithy profile, and this bottling is layered, chalky and peppery.
Drinking well now and holding for five years. Serve at 10-12°C with fresh seafood, grilled fish or a green salad with herbs.
