Domaine Guffens-Heynen Jeunes Vignes et Derniers Jus is made from the young vines and the last pressings of the old, and is bottled as plain Bourgogne.
The name is a plain description of what is in the bottle: the first, gentle pressings from the domaine’s younger vines together with the firmer, later pressings from the old ones. The fruit comes from across the Guffens-Heynen holdings at Chavigne, in Saint-Véran and in Pouilly-Fuissé, the last including some Premier Cru land, and because the components cross appellation lines the wine is declared as Bourgogne. It is fermented and aged in concrete rather than barrel, which keeps the fruit direct and the texture firm, and it carries more depth and drive than the appellation would ordinarily suggest. Guffens-Heynen has worked at Vergisson since 1976, and this cuvée is the most affordable route into a cellar whose named wines are made in tiny quantities.
Ready now and worth drinking over the next three or four years. Serve at 10-12°C with grilled fish, roast chicken or a young goat’s cheese.
