Domaine Guffens-Heynen Mâcon-Pierreclos Tris de Chavigne is made only from the first gently pressed juice of the estate's most celebrated Mâconnais parcel.
Jean-Marie Guffens and Maine Heynen established the domaine at Vergisson in the late 1970s and set a benchmark for what the Mâconnais could produce, working with low yields, late picking and long lees ageing at a time when the region was better known for volume. Le Chavigne is the finest and best-known parcel of Mâcon-Pierreclos, and this cuvée draws on it in full, including the parcels known as Juliette et Les Vieilles, which are sometimes bottled separately. The tris in the name refers to the selection: only the first fraction of juice from a slow vertical pressing is used, with the later, coarser fractions set aside. The wine is fermented and raised in barrel in the manner of the domaine's Pouilly-Fuissé bottlings.
Drink from release to about eight years; serve with roast chicken, veal or grilled crayfish at 10-12°C.
