Domaine Guffens-Heynen Pouilly-Fuissé C.C. is drawn from two old-vine parcels on the steep western flank of the Roche de Vergisson.
Pouilly-Fuissé is the senior appellation of the Mâconnais, its best sites clinging to the limestone escarpments around Vergisson and Solutré. Jean-Marie Guffens founded the domaine with Maine Heynen in 1976 and built a reputation on severe pruning, very low yields and whole-bunch pressing, and his wines are routinely measured against the Côte de Beaune rather than against their neighbours. The C.C. blends fruit from La Côte and En Carmentrant, two parcels of 40- to 50-year-old vines. Carmentrant sits high on the slope at around 350 metres, on soils studded with reddish limestone pebbles, and its south-facing aspect accounts for the fleshy texture in the glass. La Côte lies directly beneath the rock itself and faces north-east, contributing acidity and a cool mineral line. No press wine was used in this bottling, so the blend rests entirely on free-run juice, and the wine is barrel-fermented and matured in the domaine's usual restrained fashion.
It is approachable now but will gain in breadth over five to eight years; serve it with grilled snapper, roast chicken or a mild washed-rind cheese at 10-12°C.
