Domaine Guiberteau Saumur Blanc Clos de Guichaux is a dry Chenin Blanc from a single walled parcel on the Brézé hill.
The walled clos of Brézé, south of Saumur, were laid out long ago around the château at the foot of the hill, and each has its own soil depth and aspect over the underlying tuffeau. Clos de Guichaux is one of the parcels Romain Guiberteau bottles on its own, planted to Chenin Blanc and farmed from the domaine's base at Mollay. The fruit is hand picked at modest yields, pressed slowly, and fermented with indigenous yeasts in barrel, after which the wine spends a long stretch on its full lees without stirring, in wood that is largely used. Sulphur additions are kept low and bottling is unhurried. The result is dry, firmly structured Chenin in which the limestone is the loudest voice.
Worth a few years in bottle, or a decant if opened early. Serve at 10–12°C with roast poultry, grilled white fish or a hard goat's cheese.
